12 Crock Pot Freezer Meals (NO BEANS)

As I am preparing for surgery, I was trying to think of ways to lighten the load for my husband. I have always wanted to do a couple weeks worth of freezer meals. Then, all I would have to do is pull it out of the freezer and dump it into the crock pot. Well, what a better time to try it out. 

My boys, husband included, don’t do beans. I had a hard time finding freezer meals without beans. I figured we can’t be the only ones who don’t do beans…. so here is to all the other bean free families!

I made my list of all the meals I wanted to make, wrote out some recipes and compiled a grocery list (which is listed at the bottom of this post). Then, I bought all the groceries at once. Once I got home, it took me roughly an hour and a half to get all bags labeled, veggies chopped, and meals made. (including taking photos of each bag and making room in the freezer). I must say, I believe even after I get back on my feet, I will be doing this way more often!! 

I do not have photos of the meals themselves yet, but I will add them at a later time! For now, here are the recipes and the photos of how the bags look. These are all in gallon freezer bags labeled with the name of the recipe as well as the instructions. Normally, I would suggest putting a date on each but since I know that we will be using them specifically for the next couple weeks, I did not. 

1. Chicken Wings

Ingredients

  • 14 Chicken Wings
  • 1/2 cup packed brown sugar
  • 1/3 cup honey
  • 1/3 c soy sauce
  • 1/2 cup balsamic vinegar
  • 2 tsp minced garlic
  • 1 tsp hot sauce
  • 1 tsp onion powder
  • 1 tsp ground ginger
  • 1/8 tsp black pepper
  • 1 tbsp cornstarch
  • 1tbsp water

Directions

  1. Spray crock pot with cooking spray. Lay chicken wings flat on the bottom of the crock pot.
  2. Wisk together all ingredients except cornstarch and water in a bowl. (FREEZE)
  3. Pour ingredients over chicken wings and toss to coat wings. (I added wings to mix prior to freezing)
  4. Cook wings on high for 2 hours or low for 4 hours. Turning half way through if possible.
  5. In a small bowl, whisk cornstarch and water. Add to crock pot and mix. Cover crockpot and cook on high for 10 additional minutes
  6. Serve with ranch if desired. 

2. Chicken Abodo

Ingredients

  • 5 boneless skinless chicken
  • 1/2 cup white rice
  • 1/3 cup soy sauce
  • 1/3 cup water
  • Head of garlic, minced
  • 2 tsp ground pepper
  • 4 bay leaves
  • 1 TBSP Sugar

Directions

  1. Mix all ingredients (EXCEPT RICE) together. (FREEZE)
  2. Add chicken.
  3. Cook on low for 4-6 hours or until chicken is tender.
  4. Serve with rice.

3. Beef Stew

Ingredients

  • 3 lbs beef stew meat
  • 8 slices of bacon
  • 4 Tbsp melted butter
  • 2-3 chopped shallots
  • 4-5 garlic cloves, minced
  • Small bag of baby carrots
  • 2 tsp thyme
  • 1/2 tsp rosemary
  • 1/2 tsp garlic powder
  • 1 teaspoon sea salt
  • 1 tsp black pepper
  • 1 TBSP tomato paste
  • 2 cups beef broth

Directions

  1. Mix all ingredients except broth/water and add to crock pot. (FREEZE)
  2. Add broth or water to crock pot
  3. Cook on low for 8-10 hours

4. Enchilada Wraps

Ingredients

  • 5 boneless, skinless chicken breasts
  • 1 large can Enchilada sauce (28 ounce)
  • 1 chopped yellow onion
  • 1 chopped bell pepper
  • 1 cup sharp shredded cheese (for serving)
  • Tortillas (for serving)
  • Sour Cream (for serving)

Directions

  1. Combine all ingredients (except tortillas, cheese, and sour cream). (FREEZE)
  2. Cook on low for 6 hours or high for 4 hours.
  3. Shred chicken
  4. Serve with tortillas and sour cream

5. Rosemary Chicken and Bacon

Ingredients

  • 5 pieces of boneless skinless chicken breasts
  • 5 slices of bacon
  • 1 TBSP olive oil
  • 2 tsp ground black pepper
  • 3 TBSP minced garlic
  • 2 TBSP rosemary

Directions

  1. Brush chicken with oil.
  2. Season chicken with pepper, rosemary, and garlic. 
  3. Wrap each piece of chicken with bacon (FREEZE)
  4. Cook in crock pot on low for 5-6 hours or on high for 3-4 hours.

6. Pineapple and Ham

Ingredients

  • 2-3 pound ham
  • 1 large can pineapple chunks WITH juice
  • Rice

Directions

  1. Add Ham and Pineapple to crock pot with the juice.
  2. Cook on low for 6-8 hours or on high for 4-5 hours.
  3. Serve with rice

7. Chicken Tortilla Soup

Ingredients

  • 3 chicken boneless skinless chicken breasts
  • 1 can enchilada sauce (10 oz)
  • 1 can diced tomatoes (15 oz)
  • 1 onion
  • 7 ounce can chopped green chilies
  • 3 cloves minced garlic (ADD)
  • 1 tsp chili powder (ADD)
  • 1 tsp cumin
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 bay leaves
  • 2 cans corn drained
  • Crushed tortillas chips (for serving)

Directions

  1. Mix all ingredients in crockpot (except chicken and tortilla chips)
  2. Add chicken to mixture (FREEZE)
  3. Cook on low for 6-8 hours or high for 4-5 hours.
  4. Shred chicken and serve with crushed tortilla chips

8. Ranch Pork Chops

Ingredients

  • 6-8 pork chops
  • 1 packet ranch dressing mix
  • 1 Family size cream of chicken soup (or 2 regular size)

Directions

  1. Mix soup and ranch together. 
  2. Add chicken (FREEZE).
  3. Cook on low for 5-6 hours or high for 3-4 hours

9. Roasted Beef

Ingredients

  • Roast
  • 1 package gravy mix
  • 1 package Italian dressing mix
  • 1 package ranch dressing mix
  • 1/3 cup water

Directions

  1. Mix all ingredients (except beef)
  2. Add Beef (FREEZE)
  3. Cook on low 6-8 hours or on high for 4-6 hours.

10. Pork Tenderloin

Ingredients

  • Pork tenderloin
  • 2 tsp garlic powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 can diet soda

Directions

  1. Season tenderloin with garlic, salt, and pepper (or your choice of seasoning). (FREEZE)
  2. Pour diet soda over tenderloin.
  3. Cook 6-8 hours on low or 4 hours on high.

11. Meatballs

Ingredients

  • 2 lbs ground beef
  • 2 cans crushed tomatoes (28 ounce)
  • 2 TBSP extra virgin olive oil
  • 2 tbsp tomato paste
  • 2 TBSP basil
  • 1/4 tsp crushed red pepper
  • 4 cloves minced garlic
  • 3 TBSP dry bread crumbs
  • 1 egg, lightly beaten
  • 3 TBSP parmesan cheese
  • 1 tsp salt
  • 1/2 tsp pepper to taste

Meatballs

Directions

(This one will be a little different. there will be two parts to the cooking so what I did was made the sauce in one bag and the meatballs in the other)

  1. Combine tomatoes, olive oil, tomato paste, basil, crushed red pepper and half the garlic. (FREEZE BAG 1)
  2. Cook on high for 3 hours.
  3. Mix ground beef, remaining garlic, breadcrumbs, egg, cheese, salt and pepper.
  4. Roll into 18 lightly packed balls.(FREEZE BAG 2)
  5. Add meatballs to sauce.
  6. Cook on high for 1 hour.
  7. Serve with grated cheese

12. Creamy Italian Chicken

 

Ingredients

  • 4-5 boneless skinless chicken breasts
  • 1 package of Italian Dressing mix
  • 1 Family size cream of chicken soup

Directions

  1. Mix cream of chicken soup and Italian dressing mix. 
  2. Add chicken
  3. Cook on High 4-5 hours or low 6-8 hours

Shopping List

Meats

  • One Bag fo Frozen Chicken Wings
  • 4 bags of frozen boneless skinless chicken breasts
  • 3 lbs beef stew meat
  • 1 package bacon
  • 2-3 pound ham
  • 6-8 pork chops
  • Roast
  • 2 lbs ground beef
  • Pork tenderloin

Veggies

  • 4 Heads of garlic or 2 jars of minced garlic
  • 2-3 chopped shallots
  • Small bag of baby carrots
  • 2 yellow onions
  • 1 bell pepper

Seasonings

  • 1/2 cup packed brown sugar
  • 1 TBSP Sugar
  • 4 tsp salt
  • 1/3 cup honey
  • 2/3 c soy sauce
  • 1/2 cup balsamic vinegar
  • 1 tsp hot sauce
  • 1 tsp onion powder
  • 1 tsp ground ginger
  • 7 tsp ground pepper
  • 1 tbsp cornstarch

  • 4 Tbsp melted butter

  • 2 cans corn

  • 1 large can pineapple chunks

  • 2 cups beef broth
  • 2 Family size cream of chicken soup (or 4 regular size)
