Garlic Pesto Grilled Chicken and Veggies Amy Smith, June 8, 2018June 8, 2018 Garlic Pesto Grilled Chicken With Veggies on a Bed of Quinoa Trying to eat healthy while raising kids can be a difficult task. Our go-to meals have often been recipes that involve a whole lot of carbs. As I am working on transitioning to healthier foods, I have felt lost. Walking around Aldi yesterday, I decided I was just going to make something up and hope for the best. It worked! Winner winner, chicken dinner! Even my picky 15-year-old LOVED this meal! How to Make the Garlic Pesto Grilled Chicken First off, I would highly recommend making the chicken and veggies before you even start the grill. This will give them plenty of time to soak up the amazing flavors of the pesto and garlic! Place chicken in a casserole dish where they can all lay flat. Drizzle the olive oil over it, then add the pesto sauce and minced garlic. Take a spoon and spread it as evenly as possible over all the chicken. Set aside. Next, wash your peppers. Slice them but leave the seed in the mix for added flavor. Cut the onions up into slices. Wash and chop the broccoli. Throw all veggies in a large bowl and mix. Now, spoon some of the pesto and garlic on top of the veggies and toss to coat evenly. It is getting yummy! Place the veggies on four different pieces of foil making sure you seal each packet loosely, but yet, securely. Give room for the steam to circulate but tight enough on the edges of the foil to make sure the steam (and olive oil) can’t escape. Place the chicken and the veggies on the grill at the lowest setting for approximately 30 minutes to keep the chicken tender. Cook the chicken on one side for about 5 minutes (just long enough to turn it good and white. Then flip it to seal in the juices. Try not to flip the chicken often. The juices will leak out a little each time you flip it. I let it cook five mines, flipped it, cooked on the second side for 15 minutes and then back to the original side for another 10 minutes. After 30 minutes, check to see if the chicken is fully cooked. Once the chicken is cooked, take chicken and veggies off the grill. While the chicken is cooking, make your quinoa. I found a bag at Aldi in the freezer section with kale in it and, boy, was it delicious! I also found a great pesto sauce there as well! Lay your quinoa on the plate, add the veggies and then the chicken. If you eat dairy, feel free to top with feta cheese. I love mine with feta but you do not have to add the cheese! This is my type of meal! I have never made veggie packets on the grill before. I will totally need to try this. I also love the ease of grilled pesto chicken. I think the feta cheese is a must. Great recipe! π
